The area
Upper Tuscan Maremma. A small, sun-drenched valley south of Roccatederighi. A unique microclimate and soil, ideally suited for olive and wine production.
The cultivars
Moraiolo, Leccino, Correggiolo. Three native Tuscan cultivars with a long history that thrive in this region.
Cultivation
Always chemical-free. No pesticides, no chemical fertilizers. Only wood distillate, kaolin, and propolis, harvested in early October.

Public analyses, every vintage. We don’t ask you to take our word for it. The chemical and organoleptic analyses are available to anyone. Quality isn’t just claimed, it’s proven.
A clear choice: quality, not quantity.
Casa Julia is located in a small, sun-drenched valley south of Roccatederighi, in the heart of the Upper Tuscan Maremma, in an area that has always produced only olive oil and wine—and not by chance. Here we cultivate about two hectares of olive groves with three native Tuscan cultivars: Moraiolo, Leccino, and Correggiolo. These varieties are deeply rooted in this territory and express their best qualities precisely in this microclimate between the hills and the sea.
Our philosophy is not focused on productivity. We don’t count liters; we focus on quality. That is why we do not use pesticides, chemical fertilizers, or heavy metals. We prefer Wood Distillate to strengthen the plants, Kaolin to protect them from the heat, and Propolis to prevent disease. We leave the soil unplowed until late spring, then mulch it and return the nutrients to the earth.
We harvest early by mid-October (often in the first part of the month) and deliver the olives to Frantoio Franci, one of the best in Tuscany.
We don’t ask for blind trust: the chemical and organoleptic analyses of each vintage are public and accessible to anyone. And we teach you how to interpret them.

Stefano answered our phone calls immediately and provided oral and written explanations so that we could arrive at the best time and everything would be organized for an ideal presentation. The whole family loved these two hours, which passed so quickly: after a warm welcome, we visited the olive grove and learned everything about the life of the trees, their cultivation, and the harvest. Thanks to the clear explanations, enhanced by demonstrations (for example, on pruning and natural processing), this walk against the backdrop of the Tuscan landscape was very informative.
Afterwards, we headed back to the house to taste the two oils produced by the small estate. We learned even more about these two delicious beverages: taste and choice of dishes, composition, quality indicators, health benefits, storage... all in a good-natured atmosphere during very friendly discussions.
We were lucky enough to purchase this precious oil and, above all, had a wonderful time. Plan on spending at least an hour and a half to experience this enchanting moment of sharing, if you enjoy fine local products and want to discover the importance of respecting nature and our health.
A huge thank you for one of our best vacation memories in Italy, which delighted our two little boys.
Two wonderful people who have chosen working in the quiet countryside over the hustle and bustle of city life and...produce excellent oil. They didn't just sell, they opened their home to us, letting us taste their product with warm toasted bread, with dark chocolate (excellent), and between a chat and a bite of bruschetta, they explained and showed us the quality analyses of their oil.
It was the first time they saw us, and the first time ever for us that we not only tasted what we were buying, but also "knew" what we were buying!

About EVO oil
A high-quality extra virgin olive oil has three distinct sensory characteristics: fruity (aroma of cut grass, green notes, and leaves), bitter, and spicy. Bitterness and spiciness are not defects; they are indicators of a high content of polyphenols and antioxidants. An oil lacking these characteristics is almost certainly of poor quality or has already oxidized.
Polyphenols are antioxidant compounds naturally found in olives. They protect the oil from oxidation and, once ingested, have a beneficial effect on the body: they reduce inflammation, protect cells, and contribute to cardiovascular health. An oil rich in polyphenols can be recognized by its bitter taste and the slight tingling sensation in the throat.
Unfiltered extra virgin olive oil has a higher concentration of aromas and polyphenols, but only for a short period of time. Unfiltered oil contains residual particles of water, pulp, and pits, which over time lead to oxidation and thus to the degradation of the product. A filtered extra virgin olive oil is more stable and ensures a product of consistent quality over time.
Olives harvested before they are fully ripe, while still green or just beginning to turn, contain the highest concentration of polyphenols and antioxidants. As the olive ripens, the levels of these compounds decrease. Early harvesting yields less oil but of higher quality.
Extra virgin olive oil should be stored away from light, heat, and air. The ideal place is a dark pantry with a temperature below 20 degrees. Avoid keeping it near the stove or exposed to light. Extra virgin olive oil must be stored in dark containers (bottles, cans) with lids that protect the contents from contact with oxygen. Large containers (such as 5-liter cans), once opened, should be transferred to smaller bottles that allow for quick consumption.
The Casa Julia olive oil
Depending on the vintage, we produce two types of extra virgin olive oil: Casa Julia Classico and Pereti. The Classico is produced from our own olive grove and is a blend of the Moraiolo and Leccino varieties. Pereti is 95% Leccino. Although both have slightly different organoleptic profiles (Classico is bolder, Pereti is more delicate), they share low acidity and a high polyphenol content typical of an early harvest.
The chemical and organoleptic analyses for each vintage are publicly available and accessible to anyone in the our analyses section of the website. You’ll find the values for free acidity, peroxide value, total polyphenols, and organoleptic panel test results. We don’t ask you to take our word for it.
The olives are pressed at the Frantoio Franci in Montenero d'Orcia, one of the leading oil mills in the Upper Tuscan Maremma, renowned for the quality of its extraction and the speed of its processing, a crucial factor in preserving the properties of the freshly harvested oil. We also use the Frantoio San Luigi in Caldana, a 100% “Carbon Free” oil mill

Olive oil tourism and tasting at Casa Julia
The experience includes a guided tour of the olive grove with an explanation of farming practices and the philosophy behind caring for the olive trees, followed by a comparative tasting of extra virgin olive oil to learn how to recognize the differences in quality using your nose and palate.
